We started with the Caprese salad, and it was everything I want in a first bite: fresh, vibrant, and bursting with the essence of summer. The tomatoes were so ripe and sweet, it was like they had just come off the vine, and the mozzarella was perfectly creamy.
Then came the stars of the show — two unforgettable pasta dishes. First, the carbonara. Rich, silky, and expertly balanced with a perfect ratio of Pecorino Romano and guanciale. This wasn’t your typical overly creamy version — it was authentic, with that bold, salty-smooth flavor only a true Roman kitchen can achieve. The sugo pasta with slow-cooked meat sauce was just as divine — comforting and deeply flavorful, like a family recipe passed down through generations.
